    Seed Bread (Gluten-Free, Yeast-Free)

    This is a delicious bread with various seeds: chia, sunflower, pumpkin.
    Gluten-free, yeast-free!


    Ingredients:


    80 g (½ cup) chia seeds
    460 ml (2 cups) hot water
    80 g (¾ cup) ground flaxseeds
    100 g (¾ cup) sunflower seeds
    60 g (½ cup) pumpkin seeds
    180 g (2 cups) oatmeal (gluten-free)
    100 g (1 cup) chickpea flour
    1 teaspoon salt
    1 ½ teaspoon baking powder (optional)

    Directions:


    1. First, pour the chia seeds and hot water (about 60–70 °C) into a large bowl, whisk well. Leave to soak for 10 minutes.
    2. Meanwhile, preheat the oven to 180°C (top-bottom heat). In a separate bowl, mix all the “dry” ingredients.
    3. Pour the soaked chia seed mixture into the “dry” ingredients. Stir with a spatula or wooden spoon (before mixing by hand).
    4. Shape the dough into a loaf (or other shape). Place on a baking sheet lined with baking paper.
    5. Bake the bread for about 50 minutes or until the top is golden brown.
    6. Let the bread cool completely before slicing.
