    Vegan Gyros

    Gyros are a delicious Greek "kebab". Try the vegan version!


    Ingredients:


    For the filling:
    1 ½ tablespoons olive oil
    1 onion, chopped
    300 g mushrooms of your choice (such as portobello)
    2-3 cloves garlic, finely chopped
    3 teaspoons gyro seasoning blend (mixture ingredients are listed below)
    ¼ cup (60 ml) vegetable stock
    1 tablespoon tomato paste
    3 tablespoons soy or TAMARI sauce
    1 tablespoon maple syrup (or date syrup)
    1 ½ teaspoon vinegar

    For the gyro seasoning blend:
    1/2 teaspoon oregano, dried
    1/2 teaspoon ground sweet paprika
    1/4 teaspoon thyme, dried
    1/4 teaspoon ground coriander
    1/4 teaspoon ground pepper
    1/4 teaspoon ground cumin
    1/4 teaspoon onion powder
    1/4 teaspoon garlic powder
    1/4 teaspoon marjoram, dried
    1/4 teaspoon salt
    1/8 teaspoon chili flakes

    Other ingredients:
    2-4 pita breads (depending on their size)
    1 small lettuce
    2-3 tomatoes
    1 cucumber
    Tzatziki sauce (you can make it at home) or another sauce of your choice
    Fresh herbs

    Directions:


    1. Chop the onion and mushrooms.
    2. Heat the olive oil in a pan and fry the onion and mushrooms for 3-5 minutes. Add the garlic and 3 teaspoons of the “gyra” spice mix. Fry for another minute.
    3. Then pour in the vegetable broth and tomato paste and stir. Also stir in the soy sauce, maple syrup and vinegar.
    4. Simmer for a few minutes, then turn off the heat.
    5. Top the pita bread with the vegan “gyra” filling, your choice of vegetables (lettuce, tomatoes, cucumbers...), tzatziki sauce and fresh herbs.
