    Peanut Butter and Oat Flakes Balls

    Ingredients:


    1 ⅓ cup (120 g) rolled oats
    2 tablespoons (20 g) chia seeds or ground flaxseeds (optional)
    1/3 - 1/2 cup (80 - 120 g) creamy smooth peanut butter (or other nut/seed butter of your choice)
    ¼ cup (80 g) maple syrup (or other liquid sweetener of your choice: agave syrup, date syrup, etc.)
    3 tablespoons (30 g) chocolate chips


    Instructions:


    1. First, heat the peanut butter in the microwave until it is soft. Then set aside to cool. If your peanut butter is already quite runny, skip this step.
    2. Then, in a bowl, combine the oatmeal and chia seeds (chia seeds are optional). Add the liquid peanut butter, sweetener, and chocolate chips (if using) and mix well.
    3. Place this bowl in the freezer for about 10-15 minutes to firm up the mixture – this will make it easier to shape into balls.
    4. Then, using a small ice cream scoop, scoop the mixture and roll it between your palms (oil or moisten your palms with water if necessary). You should have about 11 balls.
    5. You can enjoy the balls right away or put them back in the fridge to firm up a bit more.
