    Ingredients:

    400 g firm TOFU

    For the dough:
¼ cup (60 ml) oat milk (or other plant-based milk)
    ¼ cup (30 g) flour
    salt and pepper

    For the breadcrumb mixture:
    ¼ cup (10 g) nutritional yeast
    2 tablespoons flour
    ¼ cup (15 g) PANKO breadcrumbs
    ¼ teaspoon smoked paprika
    ½ teaspoon fine sea salt
¼ teaspoon freshly ground black pepper

    Directions:

    1. Cut the firm TOFU block into 1 cm thick slices, then use your hands to break the slices into even smaller pieces.
    2. Spread the TOFU pieces evenly on a clean kitchen towel or paper towel and pat dry. Leave them there to dry slightly (for this recipe, there is no need to weigh the TOFU down, just pat it dry with a towel).
    3. In a large bowl, whisk together ¼ cup oat milk with ¼ cup flour and season with salt and pepper.
    4. In another bowl, mix ¼ cup nutritional yeast, ¼ cup PANKO breadcrumbs, 2 tablespoons flour, ¼ teaspoon smoked paprika, ½ teaspoon sea salt, and ¼ teaspoon black pepper.
    5. Place the TOFU pieces in the bowl with the “wet” mixture and gently toss to coat the pieces evenly.
    6. Then, place the rolled TOFU pieces one by one in the breadcrumb mixture and coat evenly. Remove the coated pieces and place on a plate.
    7. Preheat the oven to 200°C; line a baking tray with baking paper.
    8. Place the TOFU pieces on the tray in an even layer and drizzle lightly with oil.
    9. Bake for 15 minutes, then carefully flip the pieces, drizzle with oil again and bake for another 5 minutes.
    10. Serve while still hot with the sauce.
