    Carrot and Celery Soup

    Ingredients:


    4 carrots, diced
    4 celery stalks, diced
    1 small onion, diced
    5 cm piece of fresh ginger, grated
    4 cloves of garlic, grated
    1 handful of fresh thyme leaves
    1 tablespoon extra virgin olive oil
    Salt (to taste)
    6 cups of water

    Directions:


    1. Heat the olive oil in a large saucepan over medium heat. Add and sauté the chopped onion. Add the diced carrots and celery and toss with the onion so that all the pieces are coated in the oil. Sauté for another five minutes (with the lid on).
    2. Add the water, minced garlic, grated ginger, thyme, salt and bring to a boil. Reduce heat to low and simmer until all the vegetables are tender.
