Although traditional pesto sauce is made with basil, a similar sauce can be made with other greens, such as parsley or kale (KALE).
Ingredients:
2 tablespoons toasted pine nuts or walnuts
1 clove garlic, crushed
1 ½ cups parsley (arugula)
½ tablespoon fresh lime or lime juice
a pinch of sea salt and black pepper (to taste)
3-4 tablespoons extra virgin olive oil
½ cup freshly grated Parmesan cheese
Directions:
1. Preheat oven to 180 °C.
2. Toast the nuts on a foil-lined baking sheet (about 4-6 minutes) until fragrant and lightly browned.
3. Coarsely chop the toasted nuts. Then, place them in a food processor along with the garlic and pulse until well combined.
4. Scrape down the sides of the food processor and add the arugula, lemon juice, salt, and pepper. Slowly drizzle in the olive oil while blending until smooth.
5. Sprinkle with Parmesan cheese and grate in; add additional seasonings to taste.
6. Use this pesto in your favorite way: toss it over pasta, spread it on bread, on sandwiches, and more. Enjoy!
