    Healthy Muesli Snack

    Before making this healthy snack, soak the dried apricots and dates in warm water (for about half an hour) so that they can easily break down into a smooth mass.


    Ingredients:


    150 g almonds (~1 cup)
    80 g pitted dates (½ cup)
    80 g dried apricots (½ cup)
    60 ml water (¼ cup)
    125 g rolled oats (1½ cups)
    125 g almond butter (½ cup)
    1 teaspoon ground ginger
    1 teaspoon ground cinnamon
    ½ teaspoon sea salt

    Directions:


    1. Preheat the oven to 200°C.
    2. Line a 20 cm baking tray, cake tin or other oven-safe dish with baking paper.
    3. Coarsely chop the almonds (by hand or in a food processor). Transfer the chopped almonds to a large bowl.
    4. In a food processor, puree the dates and apricots with the water. Blend until there are still a few small pieces of fruit left.
    5. Add the pureed fruit to the bowl with the almonds. Also add the oatmeal, almond butter, ground ginger, ground cinnamon, and salt. Mix until it forms a sticky ball.
    6. Pour the mixture into a parchment-lined baking sheet or dish and press down firmly into an even layer. You can press additional almonds and oatmeal on top if you like.
    7. Bake for 20 minutes (or until golden). While still warm, cut into 12 pieces.
