Ingredients:
1 tablespoon olive oil
1 red bell pepper, cored and diced
300g cherry tomatoes, halved
200g baby spinach
4 cloves garlic, minced
500g ground beef
1/2 teaspoon dried oregano
salt and freshly ground black pepper (to taste)
2 tablespoons crumbled feta (optional)
Directions:
1. Heat the oil in a large frying pan over medium-high heat. Add the bell pepper and cherry tomatoes and sauté for 4-5 minutes. Add the garlic and sauté for another minute, stirring.
2. Add the spinach. The spinach will initially take up most of the pan, but it will wilt as it heats. Stir for 2-3 minutes while cooking, until the spinach is completely wilted. Remove the sautéed vegetables and place on a plate.
3. Add the ground beef, oregano, salt, and black pepper to the pan. Break up the meat with a spatula. Fry the ground beef until browned and cooked through, then remove any excess fat.
4. Return the vegetables to the pan and stir-fry until heated through. Garnish with crumbled feta before serving.
