Ingredients:
1 tablespoon ground flaxseed
3 tablespoons water
200 g white, plain flour
3 teaspoons baking powder
200 g almond flour
140 g brown sugar (or coconut sugar or white granulated sugar)
200 ml plant-based milk
⅓ cup (70 ml) olive oil
Half a lemon (juiced)
2 apples, peeled and finely grated
Directions:
1. In a small bowl, combine ground flaxseed and water. Set aside.
2. In a large bowl, mix together flour and baking powder.
3. Then add almond flour and sugar and mix well (so that there are no lumps).
4. Make a small well in the center of the flour, pushing the dry ingredients towards the sides of the bowl.
5. Carefully pour the wet ingredients into the well (flaxseed, plant-based milk, olive oil, grated apples, lemon juice).
6. First, mix the wet ingredients only in the center of the bowl. Once they are more or less mixed together, mix them with the dry ingredients.
7. Line a baking dish (22 cm) with baking paper or grease it with oil.
8. Transfer the dough to the baking dish. Sprinkle with chopped almonds (optional).
9. Bake on the middle rack at 180 °C for about 40 minutes. You can check whether the cake is cooked with a wooden skewer: when inserted into the middle of the cake, the skewer should come out dry, without any dough sticking to it.
10. Let it cool completely on the rack. We recommend serving with homemade vegan whipped cream.
