This is a refreshing and light salad, seasoned with Asian-inspired dressing!
Ingredients:
1 cucumber
2 carrots
For the dressing:
2 teaspoons soy or TAMARI sauce
2 teaspoons sesame oil
1 ½ tablespoon rice vinegar
2 teaspoons sesame seeds
½ teaspoon chili paste
We recommend serving with:
1 teaspoon sesame seeds
Directions:
1. Peel the carrots, cut off the ends and, using a vegetable peeler, cut them into thin strips.
2. Cut off the ends of the cucumbers and, using a vegetable peeler, also cut them into strips.
3. Place the vegetable strips in a bowl.
4. In another bowl, mix the above dressing ingredients, then pour over the vegetables and mix everything well.
5. Serve with sesame seeds.
