    Two-ingredient peanut butter cookies (gluten-free)

    This easy cookie recipe uses no eggs, no flour, and no baking soda!


    Ingredients:


    ½ cup (120 g) natural peanut butter
    ¼ cup (40 g) coconut sugar


    Directions:


    1. Preheat oven to 350°F (180°C).
    2. In a medium bowl, combine peanut butter and coconut sugar.
    3. Stir ingredients together with a spatula (the batter will still be quite runny).
    4. Using a small scoop or spoon, scoop dough into 9-10 cookies. Place on a baking sheet lined with parchment paper.
    5. Bake cookies for 12-15 minutes. Then remove from oven and let cool completely (they will firm up a bit as they cool).
