Ingredients:
12 falafel (homemade or store-bought)
8 slices pita bread (or other bread of your choice)
Handful of cherry tomatoes, halved
½ cucumber, sliced
1 red onion, thinly sliced
Handful of olives
½ cup diced feta
Recommended toppings:
½ cup hummus (homemade or store-bought)
½ cup baba ganoush (homemade or store-bought)
½ cup yogurt curry sauce (homemade or store-bought)
Directions:
1. If using store-bought falafel, follow the package directions. If making homemade falafel, prepare according to your preferred method. Place the warm falafel in the center of a large serving platter.
2. Place the hummus in a bowl and make a small well in the center of the hummus. Drizzle with olive oil. Place the baba ganoush sauce in a separate bowl and garnish with fresh pomegranate seeds. Pour the yogurt curry sauce into a separate bowl and sprinkle with black pepper. Arrange the bowls with the sauces around the falafels.
3. Wash the vegetables well. Chop the cherry tomatoes, cucumbers, and red onion. Arrange them next to the bowls with the sauces.
4. Dice the feta cheese and also arrange it on the appetizer tray.
5. Warm the pita bread in the oven or in a frying pan. Keep it covered with a kitchen towel to prevent the bread from hardening.
6. You can season the appetizers with fresh herbs: mint leaves, cilantro, or parsley.
