You can serve the yogurt curry sauce with grilled vegetables, salads, falafel, crackers, etc.
Ingredients:
½ onion, sliced
2 garlic cloves
1 cup plain (Greek) full-fat yogurt
1 tablespoon fresh lime or lime juice (about half a lemon)
1 teaspoon curry powder
salt (to taste)
2 tablespoons mayonnaise or sour cream (optional)
Directions:
1. Preheat oven to 180°C. Line a baking sheet with baking paper.
2. Place the onion and garlic (with skin) on the baking sheet. Cook for 20 minutes or until the onion is soft and slightly caramelized (you can also fry it in a pan with a little oil).
3. Let the onion and garlic cool slightly. Then peel the garlic and place it in a small food processor or blender with all the other ingredients. Blend until smooth.
4. Taste and adjust seasoning if necessary.
Yield: 1 cup sauce
