Hummus is a Middle Eastern chickpea spread that can be used as a snack, dip, or topping for other dishes.
There are many variations of hummus. Try one of them – chickpea spread seasoned with Jalapeno peppers and coriander!
Ingredients:
1½ cups (400g) cooked chickpeas
¼ cup tahini (sesame paste)
1 small lemon (squeezed)
¼ cup cold water
a pinch of salt (to taste)
1-2 cloves of garlic
1-2 Jalapeno peppers, seeds removed
1 handful of coriander leaves (remove woody stems)
Directions:
1. Blend the following ingredients in a high-speed blender until smooth and creamy: drained cooked chickpeas, lemon juice, tahini (sesame paste), garlic, Jalapeno peppers, cilantro leaves and salt. Stop to scrape down the sides of the blender; also check the consistency of the hummus. If necessary, add a tablespoon of cold water to achieve the desired texture (just don’t add too much water or the hummus will be too runny). Blend again until smooth.
2. Transfer the hummus to a serving bowl and drizzle with extra virgin olive oil (optional). This hummus is best served after chilling in the fridge for 30 minutes to allow the flavors to meld. When serving, sprinkle a few sesame seeds, a few whole cooked chickpeas, fresh cilantro leaves and sliced hot peppers on top.
