    Avocado, Tomato, and Mozzarella Salad

    Ingredients:


    2 mozzarella balls
    3 medium tomatoes
    1 avocado
    2 tablespoons extra virgin olive oil
    salt and freshly ground black pepper (to taste)
    handful of fresh basil leaves

    For the dressing:
    1 cup balsamic vinegar
    1-2 tablespoons sweetener: honey or maple syrup (optional)

    Directions:


    1. Slice the tomatoes, mozzarella, and avocado.
    2. Prepare the sauce: Add the balsamic vinegar and sweetener (optional) to a small saucepan. Bring to a boil, reduce heat, and simmer for 10-15 minutes. Use immediately or store in an airtight container in the refrigerator. The sauce will continue to thicken as it cools.
    3. Arrange the tomato, mozzarella, and avocado slices on a plate. Drizzle with olive oil and two tablespoons of the prepared sauce. Sprinkle with salt, pepper, and top with basil leaves.
