    Easy-to-Make Vegan Muffins

    Ingredients:


    2 cups (300 g) SELF RAISING flour with raising agents
    ½ cup maple syrup
    ¾ cup (180 ml) vegan milk of your choice
    ¾ cup vegan butter of your choice, melted
    ½ cup (100 g) vegan chocolate chips
    1 teaspoon vanilla extract/essence

    Directions:


    1. Place the flour in a large bowl and make a well in the centre. Add all the “wet” ingredients into the well and whisk together (but not too much!). Add the chocolate chips.
    2. Divide the batter evenly between greased cupcake tins (12 cupcakes). Sprinkle with additional chocolate chips (optional).
    3. Bake in a preheated oven at 180°C for about 25 minutes. You can check if the cupcakes are done with a wooden skewer: when inserted into the middle of a cupcake, the skewer should come out dry and free of batter.
    4. Once the cupcakes are done, let them cool for a few minutes.
