Ingredients:
150g mixed salad
1 can tuna (drained)
4 mozzarella balls
½ cucumber
1 small shallot (also known as shallots or shallots, SHALLOT)
100g sweet corn, cooked and cooled
For the dressing:
⅓ cup olive oil
¼ cup lemon juice
1 teaspoon French mustard DIJON
½ teaspoon honey or maple syrup
1 clove garlic, minced
salt and pepper (to taste)
Directions:
1. Finely chop the mozzarella balls, cucumber and shallot.
2. Place the salad in a large bowl. Top with the tuna, mozzarella, cucumber, shallot and corn.
3. In another bowl, mix the dressing ingredients listed.
4. Drizzle the dressing over the salad and toss.
