    Broccoli and Green Pea Soup

    Most of the ingredients in this recipe are frozen, but you can use fresh, unfrozen ingredients too!


    Ingredients:


    130g frozen broccoli
    130g frozen green peas
    30g frozen spinach
    ½ zucchini, chopped
    60g cashews
    700ml vegetable stock
    2 tbsp nutritional yeast (or parmesan)
    ½ tsp garlic powder
    salt and pepper


    Instructions:


    1. Place all ingredients (except nutritional yeast and garlic powder) in a saucepan and cook over medium-low heat for about 10 minutes.
    2. Allow the soup mixture to cool slightly, then transfer the mixture to a blender. Also add the nutritional yeast and garlic powder and blend until smooth.
    3. Taste the soup and season with salt and pepper if needed (the exact amount of salt depends on how salty your vegetable broth is).
    4. If you like, you can garnish this pureed soup with extra green peas – prepare them in a separate pot and sprinkle them over the pureed soup!
