Ingredients:
½ cup (140 g) natural peanut butter
1 egg
⅓ cup (65 g) coconut sugar (or finely granulated brown sugar)
Directions:
1. Preheat oven to 180 ° C.
2. Place coconut sugar and egg in a large bowl.
3. Mix with an electric mixer (mixer). You can also use a whisk, but the process will take a little longer than mixing with an electric mixer.
4. Add peanut butter and mix again with a mixer until you get a thick, sticky dough.
5. Line a 20x13 cm baking dish with baking paper.
6. Transfer the sticky dough to the prepared baking dish. Spread an even layer of dough using the back of a spoon.
7. The dough will resemble a thick, sticky paste. If necessary, moisten the spoon with warm water from time to time - the dough will be less sticky and it will be easier to spread evenly.
8. Bake for about 20 minutes (+/- 2 minutes). The exact baking time depends on whether you prefer a softer (bake shorter) or harder (bake longer) texture of the “brownie”.
9. Let cool completely. Serve with your choice of toppings (for example, ice cream, caramel sauce, etc.).
Yield: 6 small “brownies”
