Ingredients:
1 teaspoon matcha powder
1 tablespoon warm water
1 cup (80 g) oatmeal
2 tablespoons chia seeds
¾ cup (180 ml) oat milk (or any other plant-based milk)
¼ cup (50 g) vegan yogurt
2 tablespoons maple syrup
1 teaspoon vanilla extract
Directions:
1. First, mix and whisk the matcha powder and warm water.
2. In another bowl, add the oatmeal and chia seeds and whisk. Then add the oat milk, vegan yogurt, maple syrup, vanilla, and the prepared matcha mixture. Whisk everything together until it is a thick, smooth mixture.
3. Pour this mixture into two jars. Cover and refrigerate for at least 4 hours (preferably overnight).
4. Remove from refrigerator the next morning and top with toppings of your choice (e.g. extra vegan yogurt, sliced kiwi, blueberries, desiccated coconut, etc.).
