Try this gluten-free chocolate vegan dessert!
Ingredients:
For the cherries (optional):
250 g fresh cherries
5 tablespoons maple syrup
2 tablespoons brown sugar
For the mousse:
700 g soft silken tofu (drain excess liquid)
350 g dark chocolate, chopped
5 tablespoons brown sugar
Directions:
1. Prepare the cherries (you can omit the cherries for this vegan dessert): remove the pits from the cherries, then place them in a saucepan with the maple syrup and sugar. Heat for a couple of minutes until the cherries soften.
2. Then place the cherries in a colander over a large bowl and let the excess liquid drain.
3. Meanwhile, melt the chopped chocolate (in a bowl over a pot of simmering water or in the microwave).
4. Place the drained tofu, melted chocolate, and brown sugar (optional) in a food processor or high-speed blender and blend until smooth.
5. Use a rubber spatula to transfer the mixture to a bowl. Add the cherries (if using) and mix. Set aside a few cherries to use later to decorate the dessert.
6. Spoon the mixture into glasses or jars.
7. Refrigerate for 30 minutes. For a firmer texture, refrigerate for 3 hours or more (or overnight).
8. Serve with (vegan) whipped cream. Enjoy!
