    Broccoli "Rice"

    Serve broccoli “rice” as a side dish with a variety of dishes; you can also use it to season salads.


    Ingredients:


    1 head of broccoli, rinsed
    1 tablespoon olive oil
    1 shallot, finely chopped
    1 clove garlic, minced
    salt and pepper (to taste)

    Directions:


    1. Cut the top of the broccoli in half and remove all the florets with a knife.
    2. Use a razor to remove the woody parts from the broccoli stem. Then cut the stem into 2-3 cm pieces.
    3. Place all the broccoli parts in a food processor and process until they are the size of rice. We recommend chopping the stem pieces first (to make them as fine as possible).
    4. Heat the olive oil in a large skillet and sauté the shallots and garlic for 1 minute.
    5. Add the broccoli rice to the skillet and sauté for 3-4 minutes. Season with salt and pepper.


    Yield: 2-3 cups broccoli “rice”
