This is a healthy and delicious sweet potato appetizer. Serve with your favorite dipping sauce!
Ingredients:
2 medium sweet potatoes (500 g)
2 tablespoons cornstarch
2 tablespoons water
½ teaspoon garlic powder
½ teaspoon ground paprika
½ teaspoon sea salt
Extra virgin olive oil (for drizzling)
Directions:
1. Preheat oven to 220°C. Line two baking trays with baking paper.
2. Cut sweet potatoes into strips and place in a large bowl.
3. In a small bowl, mix cornstarch and water (until cornstarch dissolves). Pour mixture over sweet potatoes; add garlic powder, ground paprika, and salt. Mix well with your hands to evenly distribute the spices.
4. Evenly arrange the potato strips on the two prepared baking sheets. Drizzle generously with olive oil.
5. Bake for 15 minutes (top and bottom of oven). Remove from oven; flip the fries with tongs (if they look dry, drizzle with a little more oil).
6. Return both trays to the oven (swapping their positions). Bake for another 7–12 minutes, or until the fries are browned and crispy.
7. Remove from oven and let cool slightly. Season with additional garlic powder, ground paprika, and salt (to taste).
