Ingredients:
2 cans tuna (drained)
1 broccoli
1/3 cup mayonnaise
1/2 tablespoon Dijon mustard
A handful of chopped spring onions
2 tablespoons sunflower seeds
1-2 tablespoons chopped parsley, chives or other herbs
Salt and pepper (to taste)
Directions:
1. Remove the florets from the broccoli, place them in a food processor and chop until the broccoli texture resembles rice.
2. Place the tuna, mayonnaise, mustard, broccoli “rice”, sunflowers, spring onions and parsley in a bowl.
3. Mix everything well.
4. Serve the tuna salad in bowls, spread on a sandwich with your favorite bread or form rolls with lettuce leaves. Delicious!
