    Chocolate-Covered Dates

    Ingredients:

    15 dates (MEDJOOL / MEDJOUL dates are best)

    170 g of chocolate of your choice (dark, vegan...)

    1 teaspoon of coconut oil (optional)

    2 tablespoons of nut butter of your choice (peanut, almond...)

    15 hazelnuts, almonds or other nuts

    Directions:

    1. Open the dates (with a knife or your fingers - along the length of the date).

    2. Remove the pit inside.

    3. Put a teaspoon of your chosen nut butter in each date. Also put a chosen nut inside.

    4. Close the date by gently pressing both sides so that there is no gap and the two sides stick together nicely.

    5. Place the chocolate and coconut oil in a microwave-safe bowl and melt (over low heat, stirring occasionally). You can also melt the chocolate and coconut oil by using steam over a pot of simmering water.

    6. Using a fork, dip each date in the melted chocolate.

    7. Transfer the coated dates to a baking sheet. Sprinkle with a few chopped nuts.

    8. Place in the refrigerator for 1 hour (or in the freezer for 15 minutes).

    Yield: 15 chocolate-covered dates
