    Mashed Sweet Potatoes

    We recommend serving these mashed sweet potatoes as a side dish with other dishes!


    Ingredients


    1.5 kg sweet potatoes (about 6 potatoes), peeled and cut into 3 cm cubes
    4 tablespoons butter, cut into pieces
    120 ml milk, warmed (½ cup)
    60 ml maple syrup (¼ cup)
    1 teaspoon sea salt (you may need more)
    Freshly ground black pepper
    Fresh thyme leaves (optional)

    Directions:


    1. Place the sweet potatoes in a large pot and pour cold water over them to cover them (3 cm above them). Stir in 1 tablespoon salt.
    2. Bring to a boil over high heat, then reduce heat and simmer for 10-15 minutes or until the potatoes are tender and easily pierced with a fork.
    3. Drain; Add butter, milk, maple syrup, salt, and ground pepper. Mash with a potato masher until smooth.
    4. Taste and season with salt if needed. We recommend serving with butter and fresh thyme leaves.
