    Chickpea Bread (Gluten-Free)

    This vegan bread is made with a falafel-like chickpea mixture.
    Enjoy these flatbreads with hummus, spread on sandwiches, and combine with a variety of salads!


    Ingredients:


    200 g chickpeas, soaked overnight (canned chickpeas are not suitable)
    1/2 cup onion, chopped
    1 cup coarsely chopped parsley
    1 cup coarsely chopped cilantro
    1 small green chili pepper or Jalapeño pepper (jalapeno)
    3 cloves garlic
    1 teaspoon cumin
    1 teaspoon salt
    1/2 teaspoon cardamom
    1/4 teaspoon black pepper
    1/2 teaspoon baking soda
    1/2 cup chickpea flour
    3 tablespoons water
    1 tablespoon olive oil

    Directions:


    1. Soak the chickpeas in water overnight. Make sure the water completely covers the chickpeas (5-10 cm above them), as the chickpeas will triple in size.
    2. Preheat the oven to 200 °C.
    3. Place the chickpeas in a colander and rinse under running water, then place in a food processor. Also add the onion, parsley, coriander, pepper, garlic, cumin, salt, cardamom, baking soda and pulse until finely ground. Place this “falafel” mixture in a large bowl and refrigerate for 30-60 minutes.
    4. Remove the mixture from the refrigerator and add the chickpea flour, water and olive oil. Mix everything well with your hands.
    5. Spread the falafel mixture on a baking sheet lined with baking paper. Press gently with your hands to make the patty completely flat.
    6. Bake for 25 minutes.
    7. Let the flatbread cool for about 10 minutes. Then cut into individual pieces.
