Ingredients:
420g diced chicken
2 celery stalks, diced
½ cup basil pesto
¼ cup mayonnaise
¼ cup red onion, diced
¼ cup toasted pine nuts
½ teaspoon salt
¼ teaspoon freshly ground black pepper
Optional: freshly grated Parmesan cheese
Directions:
1. In a large bowl, mix all ingredients well until evenly coated with basil pesto.
2. Enjoy this salad immediately or refrigerate.
