Peanut porridge is popular in many parts of the world: Africa, Asia, the Caribbean (Jamaica).
This is a great breakfast option!
Ingredients:
35 g peanuts, in-shell (¼ cup)
30 g rolled oats (⅓ cup)
115 ml water (½ cup)
115 ml milk of your choice (can be plant-based)
3 tablespoons maple syrup
1 teaspoon vanilla extract
1 teaspoon cinnamon
a pinch of salt
peanut butter (optional)
Directions:
1. Soak the “raw” peanuts in ½ cup water for at least 2 hours (or overnight).
2. Drain and place the peanuts in a high-powered blender (mixer) with all the other ingredients. Blend until smooth.
3. Transfer the mixture to a small saucepan. Heat over very low heat for about 1-2 minutes (or until thickened). Stir constantly with a whisk or wooden spoon.
4. Taste and check the sweetness and consistency of the porridge. If you want the porridge to be sweeter, add more maple syrup. If you want the porridge to be thinner and less sticky, add a splash of milk.
5. Add your choice of toppings (such as fruit, honey, pistachios) and serve immediately, as the porridge will thicken over time. Delicious!
