Ingredients:
1 medium cauliflower
2 tablespoons sesame oil
2 cloves garlic, minced
1/2 teaspoon minced ginger
1/2 small onion, diced
1 large carrot, finely chopped
A few chopped spring onions
1/2 cup frozen peas, thawed
2 large eggs
2 tablespoons TAMARI soy sauce
Directions:
1. Cut the cauliflower in half, then cut the florets from the stem. Grind the florets in a food processor (with the shredding attachment) until the texture of rice.
2. Heat the sesame oil in a frying pan over medium heat. Add the garlic and ginger and fry for 20 seconds. Then stir in the onions, carrots and fry for another 3 minutes.
3. Add the “rice” and peas to the pan. Stir for another 2-3 minutes.
4. Make a well in the center of the cauliflower “rice” and crack the eggs into the well; scramble with a spatula. Once the eggs are cooked, stir everything together.
5. Add the tamari sauce and scallions and stir to combine. Serve immediately. Delicious!
