    Brown, Green, and Red Lentil Soup

    Ingredients:


    3 tablespoons olive oil
    1 small onion, chopped
    2 cloves garlic, chopped
    1 celery stalk, diced
    1 carrot, peeled and diced
    1/2 red bell pepper, diced
    1 teaspoon turmeric
    1/2 teaspoon cumin
    1 cup brown lentils
    1/2 cup green lentils
    1/2 cup red lentils (unsplit)
    6-8 cups broth or water
    Salt and pepper

    Directions:


    1. Heat the olive oil in a saucepan, add the onion and sauté until translucent.
    2. Add the garlic and sauté until fragrant.
    3. Add the carrots and celery and sauté until softened.
    4. Add the turmeric, cumin, salt, pepper and stir.
    5. Add all the lentils and stir.
    6. Add the stock and bring to a boil.
    7. Reduce heat and simmer until lentils are fully cooked (about 30 minutes). Add more stock or water if necessary.
    8. Taste and season with salt and pepper if needed.
    9. Serve hot.
    10. Recommended toppings: cashew nut cream or chopped parsley. Delicious!
