    Cauliflower "Rice"

    This “rice” can be used as a substitute for traditional rice and served as a side dish with a variety of dishes!

    Ingredients:


    1 medium cauliflower

    Additional ingredients:
    1 teaspoon extra virgin olive oil
    ½ cup chopped scallions
    ½ lime (juice squeezed)
    Sea salt and freshly ground black pepper

    Directions:


    1. Make sure the cauliflower is completely dry. Cut it into large pieces. Remove the leaves from the stem. Place the cauliflower pieces in a food processor and pulse until they form a rice-like texture.
    2. Heat 1 teaspoon olive oil in a large skillet over medium heat. Add the scallions and cauliflower “rice” and cook until heated through (about 3-5 minutes). Season with salt, pepper and lime juice (to cut the bitterness of the cauliflower).
