    Eggplant Spread "Baba Ganoush"

    Baba ganoush is a Middle Eastern condiment made from roasted eggplant, tahini (sesame paste), lemon juice, and garlic.

    We recommend serving it with Middle Eastern dishes or simply enjoying this condiment with pita bread and chopped vegetables.


    Ingredients:


    2 medium eggplants
    ¼ cup tahini (sesame paste)
    3 tablespoons fresh lemon juice
    2 tablespoons extra virgin olive oil
    2 cloves garlic
    ½ teaspoon sea salt
    finely chopped fresh parsley
    ground smoked paprika
    pepper flakes (optional)

    Directions:


    1. Preheat the oven to 200 degrees and wrap the eggplants in foil. Bake in the oven for 50-60 minutes (or until completely soft). Remove from the oven and set aside.
    2. Once the eggplants have cooled, peel off the skin and remove any large clumps of seeds. Place the eggplant flesh in a colander set over a bowl and let sit for 20 minutes to drain any excess water.
    3. Place the eggplant flesh, tahini (sesame paste), lemon juice, olive oil, garlic and salt in a food processor and pulse until smooth.
    4. Transfer the baba ganoush to a serving bowl and sprinkle with parsley, ground smoked paprika and paprika flakes (if using).
