    Oat Flour Waffles (Gluten-Free)

    Ingredients:


    2 cups of rolled oats
    ¼ cup butter, melted and slightly cooled
    1 cup of milk
    2 large eggs
    2 teaspoons of vanilla extract
    2 spoons of sugar
    2 teaspoons of baking powder
    ½ teaspoon fine sea salt

    Directions:


    1. Place the oatmeal in a high-speed blender or food processor. Grind into fine oat flour.
    2. In a large bowl, mix the milk, eggs, melted butter and vanilla extract.
    3. Add the oat flour, baking powder, sea salt, sugar and whisk with the "wet" ingredients. Let the mixture sit for 10 minutes (to allow the oatmeal to absorb the liquid). After 10 minutes, the mass should thicken nicely.
    4. Preheat the waffle iron; brush with butter or spray with cooking oil. Add batter, bake and serve waffles with your favorite toppings. Delicious!
