This unusual hummus does not contain chickpeas!
This is a delicious snack that goes well with celery, carrots, cucumbers, crackers, chips, etc.
Ingredients:
1 large cauliflower
3 tablespoons of olive oil
60 g tahini (sesame paste)
2 tablespoons of water (or more - until the right consistency of hummus)
1 lemon (squeeze the juice)
1 clove of garlic
¼ teaspoon of salt
¼ teaspoon ground cumin
a pinch of ground coriander
pepper (to taste)
Additions: olive oil, sunflower seeds and chopped parsley
Directions:
1. Heat the oven to 200 degrees.
2. Remove the florets from the cauliflower and place them on a baking sheet. Drizzle with 1 tablespoon olive oil (or avocado oil) and toss. Place the baking tray in the oven and bake for 20 minutes.
3. Transfer the cauliflower to a food processor. Add tahini, remaining 2 tablespoons olive oil, water, lemon juice, garlic clove, salt, cumin, and coriander. Add pepper (to taste). Beat on high speed until smooth and creamy.
4. Transfer to a serving bowl and garnish with sunflower seeds and chopped parsley.
