Ingredients:
3 ripe bananas
80 g of almond butter
90 g dark chocolate chips
2 teaspoons coconut oil (optional)
1 teaspoon chia seeds (optional)
Directions:
1. Line a baking tray with baking paper. Set aside.
2. Peel and cut the bananas into circles - just not too big!
3. Place half of the banana slices on the baking sheet. Spread almond butter on top of them. If you want to add chia seeds, mix them into the almond butter beforehand (before spreading on the banana slices).
4. Place another banana slice on top to create a sort of mini sandwich. Repeat with the remaining banana slices.
5. Refrigerate the banana bites until firm (about an hour).
6. Place the chocolate chips in a microwave-safe bowl. Heat in several stages (20 seconds each), stirring constantly, until the mass becomes smooth. If you want the chocolate to be a little "softer", add coconut oil and mix with the chocolate.
7. Remove the frozen banana bites from the freezer. Partially dip each bite into the melted chocolate. Then put it back on the baking sheet.
8. Place back in the freezer to harden the chocolate as well. Delicious!
Yield: 30 banana bites
