This is an easy sandwich with Mexican avocado relish.
Ingredients:
Guacamole “base”:
2 avocados
2 tablespoons soy yogurt or regular Greek yogurt
1 teaspoon of lemon juice
¼ teaspoon garlic powder
a pinch of salt
Optional extras for guacamole:
½ small red onion, chopped
5 cherry tomatoes, sliced
a handful of fresh coriander, chopped
Sandwich ingredients:
8 slices of sandwich bread
cucumbers, lettuce or other toppings of your choice
Directions:
1. Cut the avocado in half and remove the stone. Scoop out the soft part of the avocado with a spoon.
2. Place avocado pulp, yogurt, lemon juice, garlic powder and salt in a small bowl.
3. Mash with a fork to your preferred consistency.
4. Taste and check for salt.
5. Customize the guacamole to your taste by adding additional ingredients such as chopped tomatoes, chopped red onion, cilantro (optional).
6. Toast a slice of bread (optional).
7. Spread guacamole liberally on each slice of bread.
8. If desired, add additional sandwich toppings such as cucumber, lettuce, hummus, cheese, egg, olive oil, pepper, etc. Delicious!
