Goulash is a dish originating from Hungary.
Try this vegetarian version of goulash!
Ingredients:
1 tablespoon of olive oil
1 onion, peeled and finely chopped
4 cloves of garlic, peeled and finely chopped
4-5 potatoes (depending on the size of the potatoes), peeled and cut into cubes/small pieces
3 teaspoons of ground sweet pepper
1 teaspoon ground smoked paprika (optional)
800 ml of vegetable broth
3 tablespoons of tomato paste
1 tablespoon corn or potato starch
115 ml of water
salt and ground pepper
Directions:
1. Heat the oil in a large saucepan over medium heat. Add the garlic and onion and cook, stirring constantly, until softened and browned.
2. Add potato cubes, paprika powder, tomato paste and vegetable stock.
3. Season with salt and pepper (the exact amount of salt depends on the saltiness of your vegetable broth).
4. Boil. Then reduce the temperature and simmer, covered, for about 20 - 25 minutes or until the potatoes are tender. Taste and add more salt if needed.
5. When the potatoes are tender, stir with a whisk to dissolve the cornstarch in ¼ cup water. Pour into goulash.
6. Now is a good time to add any additional ingredients of your choice: red beans, sliced sausage (eg vegan sausage) or whatever. (according to your need).
7. Simmer without covering the pot for another 5 minutes (or until the sauce thickens).
8. Season with your favorite toppings, such as fresh parsley, yogurt or sour cream.
9. Serve with bread (such as naan) or other side dish of your choice. Delicious!
