Ingredients:
200 g block of feta cheese
130 g pitted olives, drained and cut in half
55 g of sun-dried tomatoes, drained and coarsely chopped
1/3 cup extra virgin olive oil
3 cloves of garlic, chopped
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
a pinch of red pepper flakes
table rock salt and freshly ground black pepper (to taste)
coarsely chopped fresh parsley (for garnish)
Directions:
1. Preheat the oven to 175 degrees. Place the feta cheese in a small baking dish.
2. In a medium bowl, combine the olives, sun-dried tomatoes, oil, garlic, oregano, thyme, basil, red pepper flakes, salt, and pepper. Mix it up.
3. Pour the prepared mixture over the feta cheese; push the olives and sun-dried tomatoes slightly to the side of the cheese.
4. Bake for 20-25 minutes until the feta is soft. We recommend garnishing with fresh parsley and serving with crostini bread slices or sliced cucumber.
