    French Carrot Salad

    Ingredients:


    450 g carrots, peeled
    chopped parsley, onion leaves or coriander

    For the sauce:
    3 tablespoons extra virgin olive oil
    2 tablespoons of lemon juice
    2 teaspoons of honey
    1 teaspoon Dijon mustard
    0.5 teaspoon of table rock salt
    0.25 teaspoon of ground cumin
    0.25 teaspoon of freshly ground black pepper

    Directions:


    1. Using a knife or vegetable peeler, cut the carrots into thin strips and place them in a large bowl.
    2. Prepare the sauce: in another bowl, mix oil, lemon juice, mustard, honey, salt and pepper.
    3. Add the chopped greens to the large bowl with the carrots, then add the dressing. Mix well.
    4. Serve - you can additionally sprinkle with fresh herbs. Delicious!
