Ingredients:
1 cup white long-grain JASMINE rice
3/4 cup well-stirred full-fat coconut milk
3/4 cup water
1/4 teaspoon fine sea salt
chopped onion leaves
Directions:
1. Place rice, coconut milk, water and salt in a saucepan (over medium-high heat).
2. Bring to a boil and cook for one minute. Then stir once, reduce the heat, cover the pot with a lid and cook for 15 minutes.
3. Do not remove the cover; turn off the heat and let the rice sit for 10 minutes.
4. Remove the lid and fluff the rice with a fork. Serve with chopped onion leaves. Delicious!
