This is a vegetarian Moroccan stew that will take 30 minutes to prepare.
Ingredients:
2 tablespoons of olive oil
1 onion, finely chopped
3 cloves of garlic, finely chopped
4 ripe tomatoes, chopped
1 teaspoon ground cumin
1 teaspoon ground sweet pepper
½ tsp smoked paprika (optional)
⅓ teaspoon turmeric
1 tablespoon of tomato paste
a pinch of salt and black pepper
1 can canned white beans (Cannellini, Navy, Great Northern are best)
230 ml of vegetable broth
Directions:
1. Heat the olive oil in a large pot or pan over medium heat.
2. Add onion and garlic. Fry, stirring constantly, until the onion becomes transparent.
3. Add the fresh tomatoes and simmer for about 5 minutes or until the tomatoes are soft.
4. Add the spices (paprika, smoked paprika, cumin, turmeric, salt, black pepper) and cook for another minute until the spices release their aroma.
5. When the tomatoes are soft, add the vegetable broth, tomato paste and drained canned beans.
6. Simmer for another 5-10 minutes until everything starts to thicken. Taste and add additional seasoning if needed.
7. Sprinkle with fresh herbs (coriander, parsley). We recommend serving with pita or naan bread.
