    Vegan Couscous Salad

    This delicious salad only takes 10 minutes to prepare!

    Ingredients:

    For the salad:

    65 g of couscous

    80 ml of vegetable broth

    1 red pepper

    ½ cucumber

    1 onion letter

    ⅓ red onion

    1 can (400g) of chickpeas

    a handful of black olives

    For the sauce:

    1 fresh lemon juice

    4 tablespoons of olive oil

    1 tablespoon of maple syrup

    1 teaspoon Dijon mustard

    1 teaspoon Italian herb seasoning mix

    salt (to taste)

    Directions:

    1. Pour vegetable broth into a pot and bring to a boil. Pour in the couscous, mix well and set aside.

    2. Place all sauce ingredients in a jar with a lid. Close the lid tightly and shake well or stir with a whisk.

    3. Wash the vegetables well. Next, chop the pepper and cucumber into bite-sized pieces (remove the seeds).

    4. Finely chop the onion leaf, red onion and black olives.

    5. Place all ingredients in a large salad bowl. Add the sauce and serve immediately. Delicious!
