Ingredients:
1 medium sweet potato, diced
Extra virgin olive oil (for drizzling)
1/2 teaspoon ground hot pepper
4-6 tortilla sheets
1 cup black beans, cooked, drained and rinsed under running water
Lime slices, for serving
Sea salt and freshly ground black pepper
For the avocado-yogurt sauce:
1/2 cup Greek yogurt
1 small avocado
1/2 garlic clove
Juice of one lime
Sea salt and fresh black pepper
Recommended accessories:
1 small avocado, diced
2 onion leaves, chopped
Crumbled feta cheese
Fresh coriander
Directions:
1. Preheat the oven to 200 degrees and line a large baking tray with baking paper.
2. Mix cubed sweet potato with olive oil, chili powder, salt and pepper. Spread on a baking sheet and bake for 20 minutes (until golden brown).
3. Prepare the avocado-yogurt sauce: in a small food processor, puree the yogurt, avocado, garlic, lime juice and a few pinches of salt and pepper until smooth. Season with additional salt and spices if needed.
4. Add your prepared sauce, baked sweet potato, black beans and toppings of your choice to the tortillas. Season with salt, pepper and lime juice.
