    Red Lentil Hummus

    Hummus spread is normally made of chickpeas, but this time it is lentil hummus. Tastes great with vegetables, naan or pita bread!


    Ingredients:


    1 cup of red lentils
    ¼ cup tahini (sesame paste)
    3 tablespoons of fresh lemon juice
    2 tablespoons of coconut oil
    2 cloves of garlic
    ½ teaspoon grated fresh ginger
    ½ teaspoon cumin
    ¼ teaspoon coriander
    ¼ teaspoon turmeric
    ¼ teaspoon cardamom
    ¼ teaspoon onion powder
    ¼ teaspoon cayenne pepper
    ½ teaspoon sea salt
    freshly ground black pepper
    Water (if necessary - for the right consistency)

    Directions:


    1. Bring a medium pot of water to a boil and add the lentils. Reduce heat to low and simmer, covered, until tender (about 15 minutes).
    2. Pour off excess water and allow to cool (10-15 minutes). Then transfer to a blender along with the tahini, lemon juice, coconut oil, garlic, ginger, cumin, coriander, turmeric, cardamom, onion powder, cayenne, salt and ground black pepper. Blend everything to a creamy mass. If the mixture is too thick, add water (1 tablespoon at a time) until you get a creamy hummus consistency. Taste and add additional seasoning if needed. Allow to cool before serving.
    3. We recommend serving with naan bread and/or chopped vegetables. Delicious!
