    Sweet Potato Salad with Feta Cheese

    Ingredients:

    For the salad:

    3 small sweet potatoes, peeled and diced

    2 tablespoons of olive oil

    2 teaspoons cumin (seeds)

    salt and ground black pepper (to taste)

    ⅓ cup cashews

    1 package feta cheese, cubed

    1 cup fresh spinach

    1 cup of horseradish

    3 tablespoons of chopped fresh coriander

    For the sauce:

    2 tablespoons extra virgin olive oil

    2 tablespoons of balsamic vinegar

    1 pinch of white sugar

    salt and ground black pepper (to taste)

    Directions:

    1. Preheat the oven to 175 degrees.

    2. Add sweet potatoes, olive oil and cumin seeds to the baking dish, season with salt and pepper, mix everything. Spread the cashews on a baking sheet.

    3. Bake the sweet potatoes in the preheated oven until soft: 30-45 minutes (stir after 20 minutes).

    4. At the same time, roast the cashews in the oven for 10-15 minutes (until they become golden-brown and their aroma spreads). Crush when cool.

    5. Meanwhile, whisk the oil, vinegar, sugar, salt and pepper (for the salad dressing) in a small bowl.

    6. Divide the feta cheese, spinach, chives and coriander equally between 3 plates. Add the still warm sweet potatoes and cashews. Pour over your prepared salad dressing and serve. Delicious!
