    Cashew Dip

    We recommend this vegan cashew dip served with chips, crackers, veggies, or simply as a dip or even a sandwich spread!


    Ingredients:


    2 cups of cashews
    1 bunch cilantro (stems removed)
    1 jalapeno, stem and seeds removed (unless you like it super hot!)
    2 cloves of garlic
    2 tablespoons of fresh green (or yellow) lemon juice
    1/2 cup fresh water
    3/4 teaspoon salt (or more, to taste)
    Freshly ground black pepper

    Directions:


    1. First, soak the cashews in 4 cups of warm water (at least 2 hours). Alternatively, you can place the nuts in a large bowl, then add 4 cups of boiling water and let the cashews soak in the hot water for about 45 minutes.
    2. Drain the cashews, then place them in a high-powered blender along with the cilantro, jalapeno pepper, garlic, lemon juice, water, salt and pepper. Blend until a thick sauce forms. If necessary, add more water and salt.
