Ingredients:
½ cup white sugar
½ cup lemon juice
2 teaspoons of diced onion
1 teaspoon Dijon mustard
½ teaspoon of salt
⅔ cup vegetable oil
1 tablespoon of poppy seeds
Romaine lettuce, torn into bite-sized pieces
100 g of shredded Swiss cheese
1 cup of cashew nuts
¼ cup dried cranberries
1 apple - peeled and cut into cubes
1 pear - peeled and cut into slices
Directions:
1. Grind sugar, lemon juice, onion, mustard and salt well with a food processor or blender. Add a little oil in a slow, steady stream while whisking until the mixture is thick and smooth. Add the poppy seeds and mash for a few more seconds.
2. In a large bowl, combine the romaine lettuce, shredded Swiss cheese, cashews, dried cranberries, apple and pear. Pour the dressing over the salad (just before serving) and toss.
