Ingredients:
2 large eggs
1 teaspoon of water
3/4 cup breadcrumbs
1/4 cup grated parmesan cheese
2 teaspoons of salt
350 g of cauliflower florets
1/2 teaspoon olive oil
1 clove of chopped garlic
400 g of tomato sauce
2 tablespoons of tomato paste
1/4 teaspoon of sugar
1/4 cup finely chopped PEPPERONI sausage
1 teaspoon Italian seasoning mix
Directions:
1. Heat the oven to 200 degrees. Oil a baking sheet and set aside.
2. Beat eggs with water in a deep bowl, set aside. In another bowl, mix breadcrumbs, cheese and 1 teaspoon salt.
3. Roll the cauliflower florets in the egg mixture and then in the breadcrumb mixture (turning to coat each piece well). Place in a single layer on the prepared baking sheet and bake for 25 minutes (or until golden).
4. Meanwhile, heat the oil in a saucepan over medium heat. Add the garlic and cook for 1 minute. Stir in tomato sauce, tomato paste, sugar and 1 teaspoon salt. Add the pepperoni sausage pieces and mix. Reduce heat to low and simmer for 10 minutes. Remove from heat and stir in Italian seasoning.
5. Serve the cauliflower bites together with the prepared sauce. Delicious!
