    Banana “Sushi”

    Ingredients:


    1 large tortilla sheet
    3 tablespoons of peanut butter
    1 banana, peeled
    2 strawberries, cut into slices
    1/2 kiwi, cut into slices
    1 tablespoon unsweetened shredded coconut

    Directions:


    1. Place the tortilla sheet on a flat surface. Spread with peanut butter (half the amount listed). Place the banana on the edge of the tortilla and roll up. Cut into even slices and top with strawberry and kiwi slices.
    2. Heat remaining peanut butter in microwave for 30 seconds (or until melted) and pour over sushi.
    3. Sprinkle more coconut on top. Delicious!
